Learn the art of cooking from experienced chef and talented teacher, Jenna White. In this comprehensive 5 day course you will learn the foundations of cooking, the principles of food safety and hygiene, acquire new knife skills, cookery skills, plating techniques, recipes and much more. Finish the week with new confidence, new skills and new energy in the kitchen.
Day 1. The Foundations. Ingredient knowledge, knife skills and pickling techniques are the focus today. Recipes - Summer rice paper rolls, Rye crisp topped with tomato, feta & olive and take home a jar of pickled vegetables.
Day 2. Eggs & Sauces. The challenge is on. Learn to perfect egg based sauces Mayonnaise and Hollandaise to finish your Super Slaw and Eggs Benedict for lunch.
Day 3. Fish and Seafood. Try your hand at filleting a whole fish & prepare shellfish. Recipes – Crispy Pan-fried Fish and Italian Shellfish Stew.
Day 4. Meat. Learn about meat cuts & appropriate cooking methods. Recipes - Pan-seared Beef with sautéed Spinach & Salsa Verde. One pan Roasted Chicken.
Day 5. Dessert. Channel chefs’ creative side and plate two desserts like a fine dining restaurant. Recipes include Not your typical Lemon Meringue Pie and Sticky Date Pudding.
